Ok so i found out how to do this when i was trying to figure out how to get free wifi tethering on my old phone.
This tutorial is a little vague on specific programs because you may find some you prefer to others. You will have to look-up how to configure the server and client yourself.
SSH Tunnel Method
What you need is-
SSH Tunnel Application on device you want to tether(I use bitvise client and freeSSH server)
SSH Server on a computer with internet access
What you do-
Tether device to phone
First thing you do, connect device tunnel client to server
Second, use a chrome proxy application such as "Proxy Switchy" to change your connection. (I use chrome but you can use another web browsers equivalent of this)
How do you test it?
Go to a website like www.ipchicken.com and check your ip address
Why does this work?
Phone companies monitor your data requests for specific things (such as desktop versions of websites vs mobile device versions). With this all data sent via the tethered device is encrypted and just looks like random data to watching eyes. All they can tell is the amount of traffic going in and out of your connection.
